A SLOW COOKER IS THE PERFECT INDOOR APPLIANCE FOR TRADITIONAL LOW AND SLOW BARBECUE COOKING. CUTTING THE PORK SHOULDER INTO LARGE PIECES ENSURES EVEN COOKING. SPOON PORK ONTO SANDWICH ROLLS AND TOP WITH COLESLAW.
Ingredients
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/8 tsp cayenne
  • 4 lb bone-in pork shoulder, cut into 3 pieces and trimmed of all visible fat
  • 1 onion, thinly sliced
  • 1/2 C brown sugar
  • 1/2 C ketchup
  • 1/3 C cider vinegar
  • 1/4 C tomato paste
  • 1/4 C water
  • 2 tbsp mustard
  • 2 tbsp worcestershire sauce
  • 1/2 tsp hot-pepper sauce
Directions

Mix salt, paprika, chili powder, cumin, and cayenne. Rub all over pork. Combine pork and remaining ingredients in large slow cooker. Cover and cook on low 6 to 8 hours.

Remove pork from slow cooker and discard bone. Cool 10 minutes. Using forks, shred pork. Combine with sauce from cooker.
